What is spelt?

Some people have been asking about spelt and why it may be better for you than regular wheat flour. Here is some information about spelt...

Spelt is a nutritious and flavorful relative of common wheat. An
ancient grain, it is unusual because it retains nearly all of its nutritional value in the kernel, therefore, even after processing, it contains high levels of proteins and carbohydrates. Good source of dietary fiber, thiamin, niacin, iron and potassium. Easy to digest. Contains gluten, but is tolerated by many wheat sensitive people. Spelt has a delicious, light and nutty flavor. Easily substituted for wheat in recipes.

So... every year Geoffrey (we're renting out of his kitchen) slaughters a couple of pheasants before Christmas. It's a ritual in the kitchen so he opens the box with the pheasant for a peek and .... the pheasant escapes! Flys around the kitchen and lands on our mookie!!

Needless to say, had to call the client and let her know that there was a bit of a mishap in the kitchen.

Knoll mookie

The 11 mookies that we shipped to Vancouver for Knoll arrived this morning intact!! Hurray! Mookies can travel!
My friends Alex and Stephen came over with these hats on!! They got them done at a hat store who embroidered the image from a postcard with the Jinja Ninja logo on it. Love it.

My old office received a mookie from Knoll. So they decided to get together, take a photo and send it to me! That was so sweet (pardon the pun).
Things are slowing down now. Hoping that Jinja Ninja will be busy for Valentines Day.

Okay, it`s getting really close to Christmas and business is getting busy with people ordering to deliver before the break. Just did a custom mookie for the design, marketing and sustainable development department of a furniture company (see pictured).

Very tired today. Trying to manage my website and get all the changes done that needs to be done. Starting up a business is overwhelming sometimes.

Hi, my name is Beverly and I started a custom cookie company called Jinja Ninja in October of this year. Yes, it's only a couple of months old and it's been a ton of work so far. One can't imagine how much work it's going to be until you're in the middle of it. Here's my story:

Went to architecture school and became a registered architect in 1994. For the past 22 years I've worked in various architectural offices in Toronto and Tokyo. Love design. Don't love the politics and the economic downturns in the profession. Collected many other designations along the way; interior design designation, LEED AP, red belt in ninjitsu, etc. Now I've written a test for my food handlers certificate.

I love to cook. I love to bake. I really like watching Restaurant Makeover and watching the cooking and the design. So I decided to combine the two and launched a designer cookie company that specializes in custom "mookies". Mookies are "message cookies" and can be personalized for any occasion.

I've been baking and icing like mad for the past couple of months. Have some help now and it's been great. Have a commercial kitchen now to work out of so I can handle "mookie hell" now. I feel like a real cookie company.
